Kristofer Got His Wii... Finally!!!

This was the most exciting day for Kristofer!! He finally got his wii from work. At Melaleuca he receives 50 loyalty pays every month he works there (if he doesn't miss a day). A wii cost 400 points. This is the last month they are giving out wii's, because they are too hard to get. But Kristofer got his. Now the fun begins, where he NEVER gets off, even for bed. Wish me luck, with this new love of his.

Easter Sunday

Easter Sunday was great! I thought it was going to be lame, because I am not with my family and there were no kids to watch hunt for eggs. I was really just missing the nieces and nephew and my family. But I was mistaken, because we had a blast!! I made my first ham, and it was AMAZING!! (thanks, Jill) Jill's ham glaze was the perfect touch! We had Melissa, Melanie, Lee, and Angie over, with a perfect Easter feast.

After dinner our next door neighbors invited us to watch their kids search for eggs. It was so cute and a perfect ending to the day!

The tradition of my Mother...


My mom always made Bunny cakes growing up. I can still remember watching her make cakes by cakes. Fridays are Melissa, Melanie, and mine new bake date. :) Last Friday was the eclairs, this Friday was my choice and since it is Easter weekend, I thought why not bring a bit of home to Rexburg.

We had a bit of adventure, I wont go into that detail. It was so much fun and now I have cute Bunny cakes and I feel as if I have my family close around me. Thanks mom, for being such an amazing mom. For always being involved in our lives and for being so creative and crafty. It is all the thoughts of kindness you show to others (including us) that rubs off to your children (us). Thanks for that example. Even though I made my first Bunny cake, I would have given it up to spend this Holiday with you! Miss you!

Who LOVES Olive Garden??



Ok, so as I was eating the the last bowl of Kristofer's favorite soup at Olive Garden, I realized I hadn't taken a picture. :)

Kristofer really likes Toscana Soup. And if you don't know we have (shhh) secret recipes. Kristofer made this soup, without the Olive Garden $PRICE$. YAY! It was so amazing, if you go to Olive Garden I recommend that you try it. If you really want to make it, let me know. I am not going to post it. ;) It is a bit spicy, but so delicioso.

Mi FAVORITO!!! The only thing different is I accidentally add too much beef and I didn't have ditali noodles. This too is amazing!



No more Olive Garden for us any more, because we even have the salad dressing recipe!! :)

One year ago today...

This is what happened one year ago this day,

"In March[2007], Kristofer flew into Salt Lake City to meet my parents. That was just fun all in its own. We had tons of fun just hanging out down there. We went on a picnic, went ring shopping, had a fun/romantic dinner, went to a wedding Expo, and just enjoyed our time together and with my parents. On Sunday, March 18, 2007, Kristofer and I went up to the Bountiful Temple and walked the grounds. We sat on the stone which stated what temple it was and just talked. After a while, we got off the rock and decided to continue walking. As I was making my way down to the sidewalk, Kristofer grabbed my arm and pulled me into him, while saying, "Just hold on a minute." As I turned around toward him, he got down on one knee and ask, "Corrine, Will you marry me?" It was so incredible! The emotions were all there!! I too, got down on both my knees and said "Of course!" as I kissed him. As we walked down the sidewalk back to the car, a butterfly came off the temple grounds and fluttered across our path until we got to the car. (For those who don't know butterflies are my favorite, and Kristofer had my ring engraved. It says "Mi mariposa" meaning "My butterfly" in Spanish.) It was a beautiful sign and a great way to start our life as an engaged couple."

Carmel Apple Eclair Cake



This is the yummy dessert I made for Sunday's dinner. I made it Saturday night and let is sit over night. I have to confess I did not make my own apple filling... I bought 2 cans of 30 ounce apple filling. That sped up the process. And I did not use cinnamon graham crackers. HERE
is the recipe. The casserole dish was very full! It was a hit! YUMMY!!

Ok, Like I said nothing interesting, just more cooking!! Who wants to spend money galore on things you can make perfectly at home??

ECLAIRS!!
Melissa invited me over for some hanging out time. Which I definitely needed! She found a recipe for eclairs!! They turned out amazingly.

Yes I have decided we are going to open up our own pastry shop and cafe, there I will let the witnesses my would cooking. (recipes from allrecipes.com)

The recipe is too long to place on the blog, so click here to get it. It is real easy... takes a bit of time (just the cooking in the oven), but they are SO worth it. Where Melissa works they are like $7 a piece (I think thats what she said). I challenge each of you to try it!! :) Have a great day!

OK, OK , OK ...

So my life isn't very interesting right now, and my blog is full of food and videos. Sorry, but really there is nothing new. Anyway, So I have been trying to be a good Mormon wife and cook dinner, not just microwave or buy it 'to go.' :) So that's way recipes are on here.

Kristofer really wanted English Muffin pizzas and I wanted to use what we have to make them...
  • English muffins (check)
  • pepperoni (check)
  • cheese (check)
  • olives, for me (check)
  • pizza sauce ... oh no... we dont have that.
I looked up on my favorite website allrecipes.com and found this recipe for pizza sauce.
And let me tell you IT IS AMAZING and very easy. I love it, I was kinda nervous about it, but it's so yummy. You can try it too!!















SERVINGS & SCALING

Original recipe yeild: 2 3/4 cups (4 pizzas)

INGREDIENTS

  • 1 (15 ounce) can tomato sauce
  • 1 (6 ounce) can tomato paste
  • 3/4 teaspoon ground oregano
  • 1/4 teaspoon dried minced garlic
  • 1/4 teaspoon ground paprika
number of stars

DIRECTIONS
  1. In a medium bowl, Mix together tomato sauce and tomato paste until smooth. Stir in oregano, garlic and paprika.
FYI... This recipes is a lot, so if I did it again... I would lower the ounce amount for the canned sauce and paste. ENJOY!

AHHHHHHHHHHHHHH!!!

Do you ever just feel like screaming because life just seems like TOO MUCH?!?!?! Ok, well I do! And I know I dont have kids, a job, or such, but still my life can be stressful! School... enough said. I am so excited there is only 4 weeks left, but with only 4 weeks left there is a lot to do!! Test after test, and I am overwhelmed! So I felt like screaming.

Well, I do hope everyone else is having a peaceful life and enjoying the scene. :) Maybe tomorrow will be better!

Grocery Shopping Online...


Kristofer and I came across the COOLEST thing EVER!! So we have secret recipes and one of which is for Wendy's spicy chicken fillet. So, I was looking at the recipe and wanted one of the ingredients. Then, Kristofer googles it. Low and behold it is sold at Sam's club... then the news gets better. You can SHOP ONLINE... you put all that you want into your "shopping cart" and once your done you specify when you'll pick it up. I love it, you can even do produce, and freezer stuff. So instead of the hour, hour and a half it takes to go through Sam's; we go pick up our cart, pay and leave!! YAY!! 10 minutes max. This also keeps us from spending more than necessary. Those with small children... this is a wonderful and quick way to shop. HALLA!! This is the only way for us from now on.

Amazing Potato Soup....

Estimated Times:

Preparation - 15 min Cooking - 10 min Yields - 4

Ingredients:

  • 2 large or 3 medium baking potatoes, baked or microwaved
  • Cooked and crumbled bacon (optional)
  • 1/4 cup (1/2 stick) butter or margarine
  • 1/4 cup chopped onion
  • 1/4 cup all-purpose flour
  • 1 can (14.5 fl. oz.) chicken broth
  • 1 can (12 fl. oz.) Evaporated Milk
  • Shredded cheddar cheese (optional)
  • Sliced green onions (optional)

Directions:
MELT butter in large saucepan over medium heat. Add onion; cook, stirring occasionally, for 1 to 2 minutes or until tender. Stir in flour. Gradually stir in broth and evaporated milk. Scoop potato pulp from 1 potato (reserve potato skin); mash. Add pulp to broth mixture. Cook over medium heat, stirring occasionally, until mixture comes just to a boil. Dice remaining potato skin and potato(es); add to soup. Heat through. Season with salt and ground black pepper. Top each serving with bacon, cheese and green onions, if desired.

VARIATION: For a different twist to this recipe, omit the bacon, cheddar cheese and green onions. Cook 2 tablespoons shredded carrot with the onion and add 1/4 teaspoon dried dill to the soup when adding the broth. Proceed as above.

This was the most amazing event EVER!!

I have had a VERY stressful week. I was sick all week and had tests, homework, housework, tutoring, and not to mention being a wife. I really wasn't sure I was going to get it all done and go and enjoy this. I kept thinking there were others who needed this more than me.

I am so glad I went! It was so uplifting and spiritual! Kenneth Cope was there and sang. He is so amazing. I listened to him my whole mission, his songs are so soothing and loving. Mercy River was the guest music and they were AMAZING too, and Jennie Oaks Baker came also. There were so many Speakers, Emily Watts, Sharon G. Larsen, S. Michael Wilcox,Jason Wright,Chris Stewart, Wendy Watson Neslon, and the famous Sheri Dew. To review who any of these people are click here.
